Peanut Butter Banana Baked Oatmeal →
I found this recipe 5 years ago after Jeremy was born. My friend and neighbor made this and brought it to me in those early postpartum days. I had to look up the recipe, I enjoyed it so much! It has been on our weekly rotation since then. You can make this one without eggs if needed. I make it with coconut milk rather than almond since one of my daughters has a tree nut allergy. I also do not top it with extra peanut butter. It is delicious and filling with 10 grams of protein and 6 grams of fiber per serving when I make it with eggs and plain, unsweetened coconut milk.
